Speaking of culinary delights: this year, our lavender plants truly outdid themselves, bursting into spectacular bloom. This bounty presented a perfect opportunity for a delightful culinary endeavour: homemade lavender syrup. Together with our children, we spent an entire afternoon in our farm kitchen, handpicking the delicate flowers, all the while being enveloped by lavender’s calming aroma. Would you like to make your own lavender syrup? Here is the recipe.

Ingredients

  • One cup of fresh lavender flowers
  • Two cups of water
  • One cup of sugar
  • Juice of one lemon


Preparation
In a pot, bring the water to a boil and add the lavender flowers. Take the pot off the heat, allowing the lavender flowers to steep for approximately 30 minutes. Strain the lavender-infused water through a sieve, discarding the blossoms. Add in the sugar. Heat the mixture, stirring constantly until the sugar is fully dissolved. Let the syrup simmer gently for about five minutes until it thickens. Remove from heat and stir in the fresh lemon juice. And there you have it! Your aromatic lavender syrup is ready to enhance drinks or lend a special touch to cakes and desserts.
