Nature is close to our hearts

The first step out into our Garden of Eden is overwhelming every single time. The hike over our parish hill and through our nature park is a pleasure for all senses. We value and respect this natural space as much as we can so that our guests, visitors and all future generations can enjoy it for a long time to come.

Expansion and preservation of the Pfarrhügel nature recreation area

For optimal cultivation of our fields on the Pfarrhügel, we produce our own compost and humus soil from our own organic waste. This precious soil is followed by the cultivation of food as part of our vegetarian farming - exclusively according to organic or biodynamic principles. We have been doing this since 2017.

 

We feed our petting zoo animals with hay from 100% of our own production, as well as well-sorted (uncooked) kitchen waste.

The highlight is our roaming hen house with 200 "laying hens" from old and rare breeds, which use twice as much free space or free range as prescribed.

Small harvest

Our hard-working women farmers and herbalists, together with their colleagues, take care of the small harvest in our fields. Potatoes, herbs, hops and fruits are harvested for our own use. Some of the produce is also enjoyed by our guests.

 

Our goal is to improve the harvest of our potatoes, for example, so that we can cover the hotel's needs with them.

Speaking of potatoes: The current project as Plateau Pioneer is the Plateau potato. It is supposed to be a special colour, special in taste and only available in the Seefeld region. We are working on the production together with local farmers.

We mow 80,000m2 of meadows in the nature recreation area only once a year. In this way, we promote biodiversity to the highest degree. This also results in the special protection of rough pastures and wetlands. In addition, we will create four reptile and small animal areas, as well as seven nesting and living areas for birds. An alpine biotope will follow by 2030.

 

We will protect the hotel garden with a maximum of two mowings per year. The planting is done in cooperation with a regional organic nursery. If we have to buy soil for our flower boxes, it is always peat-free.

By the way, our gardens are also home to over a million summer visitors: ten leasing bee colonies live with us on the parish hill during the summer months. Another ten will be added by 2026. You can find the honey at the breakfast buffet in the hotel ;-)

We currently have an area of 800,000m2, of which we will reforest 30% by 2030 and make our own forest climate-friendly. By 2025, we aim to achieve PEFC certification for our entire own forest. 

 

We are particularly proud of this: From 2024, our forest will be a support project of Austria's largest nature park - the Karwendel.

The aim is to make the maximum possible use of our own wood for all-wood construction. We have realised this most recently in the private farmhouse and in our new nature rooms and suites.

For every meat dish enjoyed in our a la carte restaurant Bräukeller Grill & Veggie, we donate € 1 to regional forest projects as carbon compensation.

From the bottom of our hearts, thank you to EVERYONE for the countless messages and the incredible outpouring of support. Please know that we are all safe.

 

At present, we are still in an orientation phase and in close coordination with authorities and partners. As difficult as it is for us to say: based on current information, we unfortunately will not be able to welcome you during the upcoming summer season. Our major goal, however, is to reopen the Klosterbräu at the beginning of December 2026. We are currently contacting all reservations that fall within this period. Thank you for your patience.

We are doing everything in our power—with full commitment, day by day—to make this possible. Over the course of the summer, we will be able to better assess whether this timeline can be met.
